If your son was born before you obtained PR (which he was), then you have to register him on form MN1 and once approved, you can only apply for a passport.

Only children born after parents obtained PR are automatically entitled to apply directly for a British passport.

Is the child's other parent also Polish??

In order to obtain PR (permanent residence) you need to have exercised treaty rights for 5 years. As your son was born (2006) 1 year after you came to the UK in 2005, you will need to register him on form MN1 as you did not have PR at that time.
