Visa for girlfriend

Hi all,

I live in UK for 1 year only.
I'm from EU.
Pernament job for whole period with sufficient salary and have tenant agreement.

My girlfriend is from Vietnam. She studies uni, 3 semesters to finish.

I would like see her during her summer holidays. I'll sponsor all trip including tickets.
I got list of documents we needed. There are a few documents from my side and more from her side.
I've been understood all must be originals.

How it should be done?
1) She has to apply online and then has an appointment at the immigration office in Vietnam.
Then how can I provide my original document as payslips and bank statements?
2) I apply online for her, submit all my original documents to the UK immigration address and then she submit/handover her original documents at the immigration office in Vietnam?
3) ?
