Marriage Visitor Visa Dilemma

Hi everyone,
I hope that I am posting this in the right place! My fiancé and I are hoping to have a short holiday in the UK in July 2017 and get married while we are there. She is a British citizen and I am an Australian citizen. I will need to apply for the Marriage Visitor Visa in order to do this.

On this website it says that the earliest you can apply is 3 months before the travel date. The problem is, we will be working on a cruise ship from 29/10/2016 until 27/4/2017, meaning that during this time I won't have access to a visa application centre. When my contract finishes on the 27/4/2017, I will be disembarking the ship in the UK, so I would really like to have the marriage visa sorted by then.

What are my options?

Is there any way that I could apply for this visa now while I am in Sydney, or is it possible to do the biometric ID stuff in Sydney now, and then submit an online application later?

Any help would be greatly appreciated! :)

Can ship's Captain not marry you (by performing ceremony)?

Some ship's captains can marry people but we would really like our family to be there and we have a deposit on a venue in the UK!

You won't be able to submit your biometrics until after you have submitted your application and received a biometrics appointment letter.
