When I applied in April points were awarded for my age when I for applied for Tier 1 (G). Don't worry about your current age it is not what they are looking for.

What visas have you been on? I was in a similar situation. I had lost my previous passort which had my original work permit in it. I'm not sure if it a general requirment for all WP to T1G ILR applications to require a letter from your previous employer. Mine was a unique circumstance due to the lost pasport.

All my letter stated was the period of my employment and my final salary.

Hi, I believe that they look at the days out of country over the last 5 years not the full time you are in the country.
