I am just so nervous, that I wouldn't like to make a mistake that would later affect us.

Yes, they say that it is legal and easier to do in Denmark, but what if the English Government doesn't recognize it and ban me, and all because we thought we were being smart?

Hello again,

As I am starting to organize the documents that we might need, in order to apply for a Fiancé(e) visa, I would like to ask if we need our birth certificates to be recent (e. g. my boyfriend has an original copy of his, but from 2010, and I have -an apostilled one- from 2008), but I don't know if they would not be acceptable, because they are old, but it is not like if that information can or is going to change.

Well, as I have been searching and reading several sites, they suggest birth certificates, just in case passports aren't available (and I would not like to take his passport, just in case he has to be sent abroad because of his job, while I wait for a reply from the UK Government), and he is British, not naturalized or from another European country.
Otherwise no, I don't have any other source as for saying we need them, for example, it is what they list here:

"Any details of study should also be provided.

Evidence of your sponsor’s immigration status/ permission to be in the UK

This could be copies of:

bio-data pages from their passport or travel document
a valid UK visa or UK stamp from their passport
a Home Office letter confirming their permission to stay in the UK"

You can submit a legally certified copy of your sponsor's passport and your original passport as the applicant. The application will be refused without these. Birth certificates aren't required.

But how do I get a "certified copy of my sponsor's passport"? Who needs to see it or put a seal on it? Won't a scanned/photo copy suffice?

No you won't need the birth certificates. You'll need to go to a solicitor who provides a legal certification service or a notary public. You should find both locally. Scanned/photo copies won't be accepted.

I am so sorry if I am asking too many questions and perhaps stealing time from you, but I have nobody else I can trust to ask, and I would like to do things right.

In order to make clear or to state that one is free to marry (neither me nor my boyfriend have been married before), they ask for a Certificate of No Impediment or Nulla Ostas, I would like to ask if:

a) Does mine have to be apostilled, besides translated by a certified translator, and
b) If my boyfriend has to get that (also refereed as CNI) even if we intend to marry in the UK, not abroad.

He was also asking me if we can get a Provisional Registry Office Booking, regarding a date, but I don't know what to tell him, because with my current type of visa (C, multi-entry as visitor) I do not know if I am able to ask for it, or if he can do it, regardless of my current visa situation. And it is tricky, because it is suggested as an additional document for a fiancé(e) visa application, but if I can't make it, how can I do it?
I hope I haven't failed to explain my doubts.
