Have you read the guide and booklet AN? Everything is there. Whoever is going to reply will read from there and reply. So why not you read it yourselves?

You just need to send the papers that they ask for in the application form.

Do they ask for P60's or rent contract in the application form?

Read page 15 of the form.

Whatever I advice you, I will read and copy from there.

You can use the service on this webpage http://fotos.tjoeten.be/#13.177

It will be the safest possible way to send your application. The charges for this type of delivery will be about £10,000 pounds.

If you cannot afford it, then buy a good envelope of correct size. Put all your documents properly into that envelope. Seal the envelope properly.
Write the UKBA address clearly and correctly. On the back of the envelope, write your address. Go to post office and tell them you want it sent via 1st class recorded delivery. They will give you a receipt. Keep this receipt safe.

I would go for Special Delivery rather than 1st class. For a few extra quid, you get a higher level of compensation if the package is lost.

You can add a self addressed envelope with the application.

The application approval chances do not depend on the quality of the referee but on you meeting the requirements. Anyone of them can act as referee. Choose the one who would be willing to sign / easier for you to ask.
