Once you submit application and pay. You will be directed to Ukvacs site. Create an account there and can upload documents there

It failed to redirect me to the UKVCAS website. Do I need to use it without being directed to the website? Is it the same login details I used for my online application, or do I need new login details?
Under "Further actions/ Mandatory actions," which is the last screen of the application online, I only see Download consent form, Download declaration form, and Book appointment, but I cannot find the "Upload documents" option, or will it appear after "Book appointment" is clicked?

You should receive a link to invite you to register to UKVCAS, it won't be on the UK.gov website.

How long does it take for the email link to be delivered, or when should I expect it? what happens when you click "Book appointment"? Because I have not yet scheduled an appointment for biometrics and document review by UKVCAS service.

You can't get an appointment until you register, and they have to send you the link. I don't know how long this generally takes, I thought it should be fairly quick, but maybe I am wrong.

What is the best evidence to provide to the Homes Office as proof of a five year stay in the United Kingdom?

I am having trouble uploading two of my documents to the UKVCAS website because one of them is too big (size of the passports need to be reduced) and the other one won't just upload. Could I still book my appointment without uploading all of my documents and have them uploaded at the appointment centre the day of my appointment?

If the documents are over the specifcied size staff at UKVCAS won't be able to upload them. You can book the docment scanning service where they will scan and upload your documents during the appointment (for a fee) or reduce the size of the document yourself (there are free services online eg https://smallpdf.com/compress-pdf)
For the file that doesn't upload, try scanning it again and uploading it

Thank you so much for your assistance. What is the status of the application? If one cannot obtain an appointment sooner? How long will it remain valid? Would they deny the application based on this? Hopefully they comprehend the situation regarding the difficulties of scheduling an appointment.

You have 45 days to attend biometrics. There is no requirement to do within a very short period of time.
