Convert from one COS to another COS CATEGORY

Hi
Asking for a friend who studied in UK and was working in a store during his student days. Now he is employed with a IT company on a Tier 2 visa but they have lost some projects and hence he is unlikely his role will be there for longer. The store he worked when he was a student have a SPONSORSHIP licence and are happy to SPONSOR him. Question is can he change from IT to Supervisor role in STORE.
