Is It Easier To Get Married In Europe

hi...i am english and a widower ..my fiancee has both mexican and canadian passports....i have lived for years in mexico and usa and now we want to get married and live in spain......we are visiting my parents in uk and we thought we would marry in uk and move to spain.....we filled in the forms sent off our passports and waited 6 weeks....now we just have more forms to fill in.....all we wanted to do was marry and go to spain,,,,,,,now we have no passports and no idea how long this will take.....would it be easier to get our passports back and marry in spain or even mexico...we have no intention of living in uk.....any help appricated.....thanks
