You could do this, but Family Permits are only possible to apply for from abroad, so you would need to leave the UK, apply abroad, then come back in with your new permit.
Since my wife will only be in the UK for a year, I don't need a 5 year Residence Card.
The fact that you only need 1 year does not mean a 5-year Residence Card is not the right document for you. In fact, in your application, you can declare that your intention is to stay only 1 year, and I believe, they
could issue you a 1-year card. You would pay the same fee of £65, so this would be an extremely silly thing to do (what if your plans change and your wife has an opportunity to stay a further or a couple more years, which is not uncommon after completing a Masters?)
The other option is for both of you to apply for Pre-Settled Status, which is free, once you are in the UK. Again, this will also give you 5 years.
No other immigration route is adequate for your case (and all others are extremely expensive in comparison).
