EEA Family permit unmarried couple

Hi there, I am new here but I would like to get some help :); I am mexican and my girlfriend is Italian, we have been together since 2010 and been living together almost ever since.
We would like to get the UK EEA family permit as a unmarried couple. We have a list documents we can provide in order to show that we have been in a relationship akin to marriage for more than two years, However, we don't have joint bank accounts, lease agreements, but when I called the British embassy in mexico City, she told me that as long as have evidence we should not have problems whatsoever.
Now, the question is I can provide a contract sign in London from the both of us lasting from september 2010 until July 2012, then a letter from my girlfriend parents certified that we´ve lived in their house for three months. Another letter from my girlfriend relatives stating that we´ve stayed in America(New York) for another three months(until february 2013) and then a contract sign for the both of us in Mexico from May 2013 until today.

We have other evidence too(letters, photographies...) but those I´ve mentioned are the strongest we have.
However, during our two years in London we left our flat a few times(As I was a visitor), but kept the rent for the entire length of the contract(we came to Mexico, she met my family) and we can prove that.
Do you think that the fact that we haven´t been in London continuously can affect my application?
Do you suggest?

The fact that you lived in London for 2 years just on a visitor visa won't be seen positive by the entry clearance officer.
The HO would expect a couple living in a relationship akin to a marriage to be able to prove it. Not having any strong proof (letters from relatives is not strong) will not be in your favour as well. I'm just trying to highlight the problems you might face with the application.
