Apply for pre-settled status. What matters for that is your sponsor's presence in the UK and your relationship to him. Your relationship will have been confirmed by the family permit.

As you work, you are not dependent financially on your sponsor. This means you can't show that he pays for your normal life expenses.
Question: do you pay the bills with him? Do you pay him a rent for living with him?
You can now play on the fact that you part of his household. So you need to demonstrate you live that the same address.

- He is sending you money/helping financially: Good news too. Add your bank account details and his. Showing the money leaving his account and landing in yours.
- Demonstrate your part of his household by sending his and your proof of address (bills, letters from DVLA, NHS, HMRC...) showing that you live at the same address
You are confusing family relationship with dependency.
You need to prove that you have completed a continuous residence period of 5 years as the family member of your EU sponsor. In other words, your family relationship still needs to exist by the time you apply for Settled Status.
