I have a mulit-entry Etats schengen visa from the french embassy, i have travelled to France already last week ani now wish to go to spain on a package holiday, can i do this if i didn't specify this at time of application. I live in the UK.

Yes you can.
A Schengen visa is valid for Schengen States. It's not restricted to a few States unless it's written on it.
As long as you visited Spain already and have a stamp, you can now travel to France.
