Hello

Italy as many other countries, allow students to work up to 20 hours per week. You can work these hours with your student visa without the need of further authorisation.

When do you finish your studies?

There are options in Italy but you need to finish your studies. You cannot just stop studying and convert your residence into a work permit. When you finish your studies, there are options. However, it's easier to find an employer than opening your own business when it comes to immigration. The rules seem easier for employees than for self-employed.

Italy has nothing to do with getting a work permit in another EU country.

Usually, one can apply from a country one is legally resident in, so chances are that you can apply at the Embassy of that EU country from within Italy without having to return to your home country. The Embassy's website should have details.
