I am currently on a working holidaymaker visa and hoping to upgrade to a work permit.

On the application, is my employer able to list my experience gained in the position already?

Yes the employer can list the experience - however it cannot be the sole basis of you being the best candidate in so far as meeting the criteria to advertise the job and consider all applicants from the resident labour pool i.e. All EU/EEA nationals and those holding Indefinite Leave To Remain.
