Help Needed: Recent changes in rules - become self employed?

Hi,

I am currently trying to enter the UK under a Tier 1 General Migrant application, however the recent changes (April 6th) have caught me out.

I am Non-EU and currently working with a full time job in France, complete with the correct Carte de Sejour (work permit) for France.

Before the April 2010 rules were introduced, I had 75 points (attibutes section), however, recent changes in the rules which have reduced the number of points availble for a PhD, and changed points for earnings.

Solution??
I believe that the only option is to try to make up the deficit in points available for Previous Earnings/Salary - by taking an extra job, or starting a company and hope it makes money enough to get me into a higher earnings bracket! (If there are any alternatives please advise me!)

If I am to become self employed in addtion to my normal day job (Teaching english as Foreign Language etc etc) , what do I need to do in order to prove this income, are bank accounts suitable, or do I need invoices/contracts, be registered as self employed in France etc

Also: What is the excahnge rate that is used for any calculation of earnings in UK pounds from Euros?

Any help would be much appreciated!
