You are applying for a Schengen visa. You simply apply as the spouse of an EU citizen, which means the visa fee is waived.

I don't think you need bank details and employment letters. But just in case maybe you want to have a bank statement with you, although again, they should only care about flight details and accomodation.

Hi as Amsterdam is in Europe the visa from Spanish embassy is a Schengen Visa so is valid anywhere in Europe so you will be fine. I doubt you will need a to show your visa in Amsterdam anyway . You don't need to show your marriage certificate, don't worry. That is everything which you need and I think my wife took a passport photo but they take a picture of you anyway, so she'll be fine. Goodluck
