It's just how it is with Schengen appointments - there's few of them and a lot of demand. Not sure about the pattern for Italian VFS, but try checking regularly as of now

I need some advice please. I have been trying to book an appointment on VFS global for Schengen to Italy however, no appointments seem to be available, ever. You need to send documents for each year as they have asked. Don't expect them to go dig around to find documents.
