I am still waiting too but from seeing other people's experiences, it seems like the norm is 3-4 months. Some people have been waiting 5-6 months even. I think there were are a lot of applications than expected from the recent euss deadline, in combination with the influx of student visa application...

The euss family permit is a bit more difficult now after the deadline. You can still apply but you will need to prove that your parent is dependent on you e.g. Evidence of money sent to them and other documents. Maybe you can try a normal visitor visa depending on how long you need them to stay

You need to either prove that the relationship began before December 31 2020 or you need to apply for a spouse visa instead

Presumably you have included an explanatory note? I guess it's generally not a good idea to respond differently from what was required. You may find they will remind you to submit the original or otherwise close the application. Not necessarily a refusal but you may have to start again from scratch...
