She should still be able to add notes as far as I know, I had my employer add a note to correct my hours because he made a mistake (after assigning the CoS to me). There is a guidance available for sponsors which shows how to make any changes.

I doubt it will be a cause for rejection, people move often. Though if you want to be on the safe side you can ask your sponsor to edit the address, its relatively easy for them to make edits or at least add a comment.
