iam unmarried and only Portugal took around 2 weeks others with in 5 working days and traveled with my eea partner.

Portugal, Spain, Greece, Germany i got Schengen visas from these countries without any problem.
Try Portugal i asked for single entry and got Multiple for 6 months.

The mail i got from Spanish High Commission it says partner or spouse do not need visa if they are traveling together, but mail i received was after i submitted my visa application any way no regrets at least i wont have any stress.

you are right its nothing to do with Greece border security when i was coming back to London i had RC but i've noticed so many European countries need to educate their staff.
I went to Malta IO and other staff were so polite and helpful no problem at all no one asked me any thing.

No need to worry i traveled with Ryne air and easy jet no problem at all just to be on a safe side keep your marriage certificate country ur traveling they might ask but not airline no problem at all

I think it was not only Ryane air staff they were dealing easy jet passengers as well, who know were they from airline staff or not but they were speaking Greek if its Ryane air staff they should've speak proper English, But they were not helpful at all they way they speak very straight forward.

Thanks again i already print Greek and English Directive 2004/38/EC what you linked me and i have joint account bank statements from past 4 years i will take randomly. I think it will be enough. I hope i wont need them but just to be on a safe.
