Hi,

How old the documents could be? For example if employer letter is for 45 days ago, the latest wage slip is for 3 weeks ago and landlord letter is slightly older a month are they fine?

I am asking about EEA Permit from outside the UK

As long as the evidences are genuine and verifiable then there should not be any problem. Although for PBS categories under UK immigration system the latest evidence should not be older than 28 days but there is no such guideline for EEA route applications.
