Hi,
My parents are applying for family visitor visa to.the UK. I have provided invitation letter confirming that I will take care of their boarding, lodging and travelling and they will stay with me in my mortgaged home. I am a UK citizen.
I have investments in Stocks and Shares ISA and have very less cash in my current accounts.
So can Stocks and Shares ISA can be used as evidence towards their visitor visa application?

If all you're doing is providing accommodation and lodging as you've pointed out above, then that's fine.
So can Stocks and Shares ISA can be used as evidence towards their visitor visa application?
Stocks and shares aren't liquid. You can't withdraw that at the ATM, neither can you go to the shop and pay with that. However, if it was your parents showing these, it would be fine as it shows that they have an income generator back home that they'd love to go back to.

I hope your parents have enough money to fund their flights to and fro. With a little extra that shows that they're not emptying their bank accounts.

They have funds in their Indian Bank Accounts and 2 properties in their name.
There is one question in the application form which asks "who is paying for your visit?". Can they say that they themselves are paying instead of me?
That way I don't have to show funds in my personal accounts.
Alternatively what i can do is sell some of the stocks and transfer around £5k Gbp in my personal account. But then I will be able to show 1 month statement as they wish to apply soon. Is there a minimum requirement of 3-6 months of personal bank statements from the sponsor for family visitor visa?

Yes they can, if they have ample cash in their accounts showing in's and out's. Because there are questions about earnings and monthly expenditures that needs to be answered.

This part, I could never understand. I'm not sure why people rush things. You must have known for months that you want them to apply. Suddenly it becomes a rush. what if they get denied because you've not done your homework properly? You need 6 months statement of account.. Is there a minimum requirement of 3-6 months of personal bank statements from the sponsor for family visitor visa?
Ideally 6 months. But I'm sure that there are some crazy account balance that could get away with much less like 2-4 months.
