Believe You get to select the duration of visit visa you are applying for as the fees varies.
Of first time visit application, reasonable to honor the 6 months and never saw any that is not multiple entry.
After the first one, subsequent visit visa can no be 2,5 years as applicable or still 6 months if you so wish.

Someone from my own family applied for a visa for 2 weeks. He got 6 months / multiple and came in for 2 weeks.

A few months later, he decided to come again for a week with the same visa.

A year later he applied again for a 6 months visa that was granted without issues.

Don't over think it. Declare your projects truthfully but as any genuine project, they might change a little. If you said 3 weeks and you stay 4 or 2, it's fine. The only thing to avoid is to stay for extensive periods then leave the UK and come back quickly.
