Are you sure? I have the understanding that although it is recommended that non-EU family members apply after their EU family member has applied (using their application number to link the two applications), this is not mandatory. So it could actually be possible for you to apply without having her new UAN.
Now, obviously, the quickest and easiest way would be for you to get in touch with your spouse, if at all possible, and request to kindly give you her new UAN. She might do it.
But even if that's not possible, provided she's still in the UK by the time you complete the 5 years, you will still be entitled to Settled Status, and there is no reason to go looking for workarounds. You are not the only person in that situation on this board. Now, each case is different. Different people are asked to provide more or less documentary evidence. The best way to know is to apply, and always be open about your situation, when asked for more details. It might take a wile, but it's the best way to do it.
