What regular checks does a sponsor need to make with respect to the status of an applicant under Tier 5 once the applicant is in UK, during the time the concerned visa is valid?

You need to have a copy of their UK visa stamp that entitles them to work for you. Then you need to keep a track on their attendance, reporting any unexplained absences, and keep their contact details on file.
