Assuming your fiancee is British, shouldn't they be making the arrangements for the wedding...registration and timescale for booking the ceremony etc??

As you will see from Vinny's link, 14 days (2 weeks) from your arrival date won't give you sufficient time. If the ceremony hasn't been booked, why does it have to take place no later than 2 weeks from your entry into the UK?

If you have a fiance visa you won't need a COA. You will however still need to notify the registrar. Have you booked a venue for the wedding?
If so, the registrar will be in attendance if it's a Civil ceremony.

Then the Registrar should also have been booked to attend the ceremony. Your fiancee must know this if she has arranged the wedding venue.
