You must provide a letter from employee which must be align with ILR guidance and must state that "required in the position for the foreseeable future". So here which employer will provide it? I believe your new employee will able to provide it.

There is no need to report annual increments. Also, since you were already being paid above the threshold, there would be no basis to suspect malpractice to meet the immigration rules. Therefore, I believe you're going to be alright.
Be assured, there will be no problem. I had very similar situation during my ILR application when I realised my employer has never informed UKVI via SMS for any increment in last years, not even the big one's (performance based) I had twice, once was within last 6 months of ILR application. I was being paid £32K and got it raised to £38K. The increment was reported via SMS because it was a performance based raise, not an annual increment. I don't think it's going to be a problem. I received a £6K raise and wasn't asked any questions. Although, mine wasn't an annual increment and was reported via the SMS.

Be ready for UKVI compliance visit.
