why don't you change airline? i doubt that there is any airport that only Easyjet flies into. I have used my FP to get back to the UK alone several times by air and by train, the only times that I had difficulties were with the Border Force while taking Eurostar.
You can ask for the family permit now. The application of FP doesn't necessary require that your sponsor to be in the UK at the time of application. don't think COA will help you to travel, it's more for your employer. Don't think a FP will hurt your application either, it was said on the official website that you need to apply for a FP to travel.
