You don't need to provide any proof of a return ticket but you might need to mention the intended date of travel.
I'd also add some documentation to prove your mother-in-law's ties with her home country .. it could be a document showing her husband, other kids, finances or property etc.

It's been nearly 6 weeks and we haven't heard anything so I've contacted UKVI to request a status update. Fingers crossed they'll get back to us within 5 days as stated.

That's pretty quick. My mother had her biometrics done on the 25 Jan but there's no update since.

Did you apply for a priority service?

I am not sure about India but in Pakistan, you can a family registration certificate issue by the govt. that you can attach with the visa application.

I am sure other people who've been in the same situation as you will have a better answer.
