you should contact an immigration solicitor, your HR may pay for it, my advice though not an expert advice is that you should also see if you have valid current leave to remain, whether you can take up employment with this new sponsor as a second employment for restricted time period... my guess is ...

I think its better that you research CoS guidance and talk with your HR/ Legal.
my thinking is that you must join as per the date on you CoS and then take leave to return back on Feb.
