But I remember you only can vary one time

I am not sure, waiting expert come here

You can vary your son’s visa first and then vary yours

Your son will definitely get a visa, even your visa rejected, you still can apply with dependent on your son

My timeline is, on the 28th day, I receive the refund of IHS, and five days later, received my BRP card first and second day, receive my dependent’s BRP card and Royal Mail delivery of my documents. Contact AR team and if they said the decision has been made and post to you. I believe you are win.

I suggest you submit all the documents which home office requested otherwise they may reject.
