Not sure about your first question.

But I saw an Aussie guy's youtube video about his YMS - he was successfully granted approval without having offered work before he started his application. Hope this helps!

Yes, you can apply for T5 whilst your T4 is still active, but you will have to go back to your home country ( maybe Hong Kong ?). I would suggest you applying with your BNO (if you have one) to apply for this visa so you are not limited to the quota of people and you would not need to acquire a CoS...

The visa however takes 6 months, we have our travel booked within the next month ... or are we able to apply for the Standard Visitor Visa even though Canadians don’t typically require that?
