I had a same situation, i sent my GNIB for citizenship and traveled to spain without it and rynair did not let me to board on the plane. i had to fly to Madrit from barcelona and get visa to Ireland. so i would not advise you to do the same mistake i did

it's complitly different when Spouse is Eu or Irish. I think it's more difficult when the person is Irish

I have a friend who got stamp for based on IBC and she is on social welfare. and not only her hole family, so i think you will not have any problems. for mothers is easier to get renewal visa then for fathers

I think if she had any doubts she wouldn't take your application and documents. I do not think she will contact your embassy at all. she showed you thumbs up that means passport check was ok. dont worry.
