I wonder how many pieces of evidence I'd need? I can provide 2 - a government correspondence and a bank statement. I wouldn't worry too much about having a bit of a delay between online application and sending the physical one, since many applications will have a delay due to postage anyway. I wouldn't leave it too long though, just in case.
