Many thanks for your response.
I've already included 6x payslips and 6x bank statements and employer letter under Financial requirement. I just wanted to know if it's mandatory to include employment offer letter with the application.
No it is not mandatory.

As you have noted, a drawback is that they may require an extra extension, prior to their ILR applications. There are no restrictions against applying early for an extension, unlike when applying too early for ILR. Don’t forget that wife requires at least A2 English for her extension.
