When I applied for mine, all of the available next day appointments were in the Croydon office so I think you'll most likely encounter the same scenario.

It should be fine as it is paid annual leave. It is the unpaid annual leave that is the issue if it exceeds a certain number of days.

It doesn't matter if your visa is still valid. If you travel overseas while your ILR application is pending, it will be treated as withdrawn.

Unfortunately the letter is mandatory for the ILR application. Would someone else in HR be able to issue it?

Questions:
1. How would I substantiate the holiday between Tier 2 visa start date and employment start date?
You just need to put this down as an absence if you've left the UK.

As far as i know there is no way to convert it to super priority once you've paid and submitted. Other members (including myself) have used this site to check (using your current BRP): https://www.gov.uk/prove-right-to-work I don't think there is a way otherwise to track application status unless yo...

You can apply and pay online 28 days before your visa issue date, i.e. 28th August 2019.

You cannot travel outside of the UK before your decision/BRP has been received. Otherwise they will treat your application as withdrawn.

Yes. As long as it is within a month of your application date (i.e. date you submit and pay online) you should be alright.

The instructions will tell you to bring all your originals to the appointment but they'll only verify your current passport based on my experience. Should be all good as long as your uploads are clear.
