Make sure you do visit France within validity of your visa. Keep the tickets for that trip.

At the Portuguese border - if asked - just tell them that you are indeed plan to visit France a couple of months later.

You shall be fine otherwise.

Most likely she will only get 6 months visa now. You can apply for a longer visa but it is unlikely she’ll be granted longer visas

It depends. I once had previous UK visa cancelled when new one has been issued. However, the general rule seems to depend on the validity of old and new visas. I believe the key is “during this period”. So if your visa expired and you did not apply for exceptional assurance during Jan - Aug 2020, they’ll be no adverse consequences.

Since the period is over and if you did not apply/regularise, you must be leaving. Seems pretty logical to me

I suspect it’s not a very straightforward case. You would probably need to adopt/ establish other form of parental responsibility. Kids mother will need to give up her parental rights officially, not just say that she wouldn’t mind.
