Your best option may be to move to another European country and apply for a family permit which she will get, if you did this before Brexit you could of moved to Northern Ireland and bring her to live with you there for 3 years and then apply for Irish Citizenship that's if you got married but this ...

My wife just got her birth cert translated in Bangkok and i had a look and it gives name and surname of both parents, did you get it translated in Thailand or Ireland?

My wife will be applying for citizenship at end of year.

ya you need to read whats needed to apply open your eyes - p60 and payslips don't need to be sent to apply for Naturalisation. many unemployed people aswell as employed people successfully get Naturalisation That’s incorrect. It is a black-and-white rule that letter from employer, P60s and payslips...

This is not needed, many spouses apply for irish Naturalisation who are married to irish citizen and they don't work. you or the childs father need to be irish for the child to get irish citizenship, if you only have a british passport then the child will be british also
