We have uploaded all documents but not submitted, cannot book f2f appointment (due to covid and new app etc.). Just waiting for the notification to use the app...

In the VAF4A Appendix 2 document there is a free text section after the financial requirements. Rather than a whole covering letter explaining how you're earning above the minimum requirement, you could just add a note here. Personally I had the same situation and added a note here, no problems.
