It would be the other way around that you should be worried about. Being on a visa with an expiry date may result in you not being granted the mortgage - unless you're applying with someone who has no immigration limitations.

Your entry would still be legal because you are the family of an Irish citizen entering the UK together. Once you get ILR, you don't need any further visas (for the UK, that is). The next step is naturalisation and then a passport application.
