1,No, you cannot hold two passports according to Indian govt. You can go to india but be ready for questions by indian authorities. I dont think you can apply from the UK as you need child's original passport .

Either you bring him if he has visa or apply from India

It is mandatory, I did two weeks ago. Council will make sure you are physically present in th UK on the ceremony day. I understand what you are saying, but how the council will make sure you are physically present since the ceremony is virtual. I think we may need to go back for physical attendance...

No. Even if it is a virtual ceremony, you must be inside UK on that date. The registrar will ask you to declare that also. Even I did bio on 4th January, approved on 3rd February , you wont get any biometric letter by post/email.
No need to panic it is just matter of time and individual application.

1, only stamped pages should be fine, I did all pages with single of pdf file each passport. Three pdf file of three passports (one was totally blank passport as yours). No need for covering letter.
2, Yes, no need to sign back of the photo

Biometric deadline will not affect your application due covid. This has been to told by UKVI.

For passport photos check Sainsbury's/asda some other shops they might have self photobooths about printing and scanning try to borrow from friends or buy one as they are not expensive, your application may not be refused for this but may be delayed. Even mine also got cancelled yesterday's appointment. contacted UKVCAS , said my biometry deadline should not be a problem.

You will get partial unused IHS eventually.

You cannot change the duration of the visa, ask your employer to change end date in Cos.

my understanding is that, your company supports first 3 months or 1month of your job.
