Hi alex, with my knowledge i can say u can make your application now, since your eea2 is expiring soon by August as u said.( about 3months time). While application is made, it takes normally upto 6months for the homeoffice to get back to you anyways. So your docs and passport will just be at their ...

Also as you know they ask documents like;

letter from the employer
payslips
bank statements

which enables them to understand where you actually work and they check if you get paid from the same employer who provides you the letter and payslips...
