I have indeed made monthly payments without any gaps and have cleared it all up except that the accounts still show defaulted on my credit file and I understand that should too go away next year.

should I detail it all in a cover letter?

Well, you can't change once you have submitted the application and since my spouse's initial application was submitted through vfs, I had to fork another £75 to be able to have my documents scanned and submitted. Still waiting for the ECO email confirmation though so let's see when it will come ...
