I used that service a while ago and what I did was to write a specific request in the second section of the SAR application form where I specifically asked for the date on which I have acquired PR status in the UK. I believe that'd be the date they have recorded on their system, just to stay on safe side.

There is no employment requirement for naturalisation, so demanding P60's only would be senseless. I believe they expect to see P60s as proof of tax and NI. During my naturalisation I was asked to provide further evidence of residence although I was already free from immigration control at the time...
