Definitely easier and quicker option is to get married in Ireland and since you are in a marriage-like relationship makes sense to me to take it to the next level. I think their biggest concern is that you will use Ireland as a back door to the UK through the Common Travel Area (CTA) given the fact that there is no passport control between Ireland and the UK.
