Ah ok, I see where you're getting that. That is specifically for visas that are for two years (FLR). An unmarried partner visa is different than a fiance visa. You should be fine.

I don't think that holds true for a fiance visa; I was under the impression that you just had to enter the UK in enough time to be able to amrry and apply for the spousal visa before the expiry of the fiance visa. But, tbh, I'm not 100% sure. Where online did you read this?

Family Permit is applied for using form VAF1. If I remember correctly, VAF2 is the UK spousal visa form.

Is the requirement of a work permit an indefinite thing? Is there a point in time where they can take up permit free employment, say after residing here x amount of time, or should they just base their plans on him only being able to be self employed?

No. You can visit the US for up to 90 days via the visa-waiver program, but cannot work as a visitor. Anything else requires a work permit/visa, etc.
