Only a complete calendar day (i.e. 12am-12am following) should be counted. In your example, you were in Ireland on Friday and Sunday, so only Saturday is counted.

The Minister has responded to a series of questions in the Oireachtas about this topic.

As of 3rd September there were 15,647 applications for citizenship on hand. The majority of such applicants are potentially affected by the ruling.

The process might be slightly different for Irish Associations so there may not be the exact same stages. But littlerr is right... second stage letters clearly say "second stage". Out of interest, what is your timeline? When did you apply, and on what basis? Did you think you had sufficient residency?

My interpretation of these terms:
"at an advanced stage of processing" - means anything after the second stage letter has been sent
"being prepared for submission to the Minister" - means anything after the application has been acknowledged
