I do not know why you are saying this, but pension Credit qualifying age in England and Wales is 65. The pension credit age is 66, not age 65. In 2020, the state pension/pension credit age became 66. And please don't tell people it is age 66 either, as it could be age 67 or age 68 for them. People ...

The High Court have ruled that under the Universal Credit regulations pre-settled status is not considered to be a right to reside for UC purposes or for any other Public Funds. Just to make it clear, from 2020 the UK state pension reritement age became age 66. This age will continue to rise for both men and woman and will relect the growing life expectancy. You can of course retrie as early as you like as long as you have the money and private pensions to support yourself....

You and your wife working will make it easier to find a place to rent. That might also negate the need for your son to be your guarantor and therefore be liable for all your rent.

To the best of my knowledge, if you are both over the age of 65 you would apply for Income Support, not Universal Credit. If you claimed UC as a self employed person- Claiming Universal Credit when self-employed ... You must make a joint claim as a couple if you live with your partner.
