Your spouse may have an issue if they are non-EEA if you fully move your residence to the UK. I think your spouse will need to show proof that you still reside together in Ireland for their visa. Someone will correct me if I'm wrong.

Yes. The fact that the spouse has a UK spouse visa doesn't mean anything, that is a nationally issued document not an EU one. Though in practicality, as there's not a hard border, the chances of them being stopped for immigration reasons is slim.

Are you both British citizens? There's no immigration process, if so. I suppose that conviction may cause you issues when job hunting or looking for housing if they care about something which happened so long ago.
